“How about a little something sweet, ladies?” was the wide-eyed request from neighbors when they heard that we were planning to open a bread bakery, back in the day. We had intended to make only breads, but how could we turn down our fellow Detroiters?

It Began with Butter! We started at the source: Julia Child. Her light, buttery brioche was Avalon’s first breakfast sweets, evolving into our signature sticky buns and our riff on “pain aux chocolat.” And then the highest source: Ann’s mom, Jan. In a pinch, Jan graciously pulled out her recipe box and shared her classic peanut butter, oatmeal raisin and chocolate chip cookie recipes with us. We’ve multiplied them by 100 or more since then, mixing them in our 150 lb (“3 flour bag”) bread mixer, tweaking them again and again. But Jan’s spirit still lives through our cookies as strong as Julia Child’s lives through our airy brioche.

Sweeter than bread, lighter than cake, brioche makes an elegant, understated breakfast. Bread pudding or French toast? A little crazy. PB and J; grilled cheese; or say, nutella panini? Truly outlandish. By the loaf or a traditional bun.

Big brother Dave weighs in: “It’s not too sweet, but it is too buttery”. As if there is such a thing! It is, admittedly, our classic brioche with more cinnamon butter rolled into it, baked on yet another layer of brown sugar butter until perfectly carmelized.

Whole cream vs. half and half: the age old scone question. We’ve handled it with equanimity-both, of course. Still cutting in the sweet cream butter in by hand every night on the wooden tables. We’ll go to any lengths to get the light and flakey scone that would make the Irish proud.

In the brownie world, there are two schools of thought: caky and fudgy. Our brownies are old school caky, with plenty of moist Callebaut chocolate for depth and moistness. These brownies are as big and over-stated as amazons: nothing subtle about them. Also available with walnuts or peanut butter (pushing it dangerously close to the baked-good-meets-candy-school).

The bakers finally went overboard with this reinvention of the classic American Whoopie Pie. Two soft pumpkin cookies filled with a buttercream filling. Totally irresistible. There are even seasonal varieties available from time to time, when the whim hits those hard-working sweets bakers.

Vegan this, vegan that!
A young, novice sweets baker offered to try some vegan sweets by replacing dairy products and sugar with vegan substitutes. Since then we’ve learned a thing or two. Now our vegan products are the fastest-growing part of our sweets line. We got the message loud and clear from our vegan customers: vegan baked goods are yummy too! Now, even non-vegans agree.
These are so delicious that we don’t even need to make a non-vegan muffin. Hearty as opposed to cakey; just sweet enough to brighten your morning, but healthy enough to feed your brain and body until lunch.

The original inspiration for Avalon came in part from Wildflour Bakery- a co-op bakery in Ann Arbor. When they closed in 1997, just months before Avalon opened, we inherited their bread slicer, some indestructible muffin pans and their date bar recipe. Thanks, Annie and Paul. For all that you do.

No wheat, no refined sugar, no dairy. How could they taste so good? The filling is merely soaked dates, raisins and cinnamon, mixed into a puree. The crust: oats and oat flour, with a little brown rice syrup, pure maple syrup and vegan shortening to bind it. The result: a super-yummy, super-healthy sweet treat that can sustain you through a long bike ride, a vigorous hike or a busy day in the city.
